Vegetarian okroshka with kvass from Mama Mary

Cold, refreshing, and authentic summer soup – just like at grandma's house.

Product used: Homemade kvass

Ingredients (for about 4-6 servings):

  • 2 medium potatoes, peeled and boiled, cut into cubes
  • 3 fresh cucumbers, finely chopped
  • 4 radishes, thinly sliced or chopped
  • 2 hard-boiled eggs, chopped (optional – for a vegan version you can omit)
  • A handful of chopped dill
  • 2 tablespoons chopped green onions
  • 1 tablespoon mustard (optional – for those who like a spicy taste)
  • 1 liter Cold kvass from Mama Mary
  • Salt and pepper – to taste

How to prepare:

  1. Cook the potatoes, cool and cut into cubes.
  2. In a large bowl, mix all the chopped vegetables, eggs, dill and green onions.
  3. Add mustard (if desired) and season with salt and pepper.
  4. Pour Mama Mary's cold kvass into the bowl, mix gently.
  5. Place in the refrigerator for at least an hour – and serve cold, with ice cubes if desired.

Small upgrade:
For a festive serving, you can sprinkle fresh dill on top and drizzle a little fine olive oil.
